Fiesta Nacho Cheese Crock Pot Chicken



4-6 Boneless Skinless Chicken Breast (cut in halves) combined with Fiesta Nacho Cheese Soup, chunky salsa, and bell peppers in the crockpot.

Cook on Low for 4-6 hours or until chicken is tender.

This was my first time at this; but next time I will add more chicken and the whole jar of chunky sauce because this time I only added a few table spoons.

Potato Soup

4 medium- large potatoes
1 quart water
1 quart milk
1 large onion, thinly sliced or chopped whichever you prefer.2
2 eggs--keep seperate
3 tbsp. flour
salt and pepper, to taste

Slice four medium size potatoes into one quart of boiling water. Add one quart milk and one onion, thinly sliced/chopped.

Mix one egg with 3 tablespoons of flour until well blended and stir into soup. Simmer until cooked thoroughly.

Thicken just before serving with one egg rubbed into as much flour as it will moisten. Season to taste with salt and pepper.
You can also top with (if you choose): bacon bits, shredded cheese, crackers, etc.

  1. This is what I did with my first attempt. As I experiment more and if I find a new way that I prefer I will edit this. I hope to add a photo the next time I cook it.

  2. 2 eggs?? I never saw eggs used to thicken soup...does it blend in well?

  3. I did have some lumps; but I only experimented with this once. I still need to try it again. I wasn't sure if the lumps were from using flour instead of corn starch. It did taste good and it gave it the dumpling effect. I want to try it again and see if I can get all the lumps out. I am hoping to experiment again soon. I will post again when I do. This was also my first attempt at Potato Soup and most of did blend well.
